Paksiw sa Kalamansi

Mom and Dad, if you're wondering what's the quickest recipe that you can cook for dinner after a long and tiring day at work, this may be your saving grace :D - in just few minutes, you're ready to have dinner before watching your favorite shows on TV.


Ingredients:

½ Kilo Galunggong (Mackerel Scad)
3 Pcs Tomatoes
2 Pcs Onion (medium size)
5 Pcs Kalamansi (Calamondin) (Medium size)
1 Cup Water
1 Tbsp Salt
Seasoning

Procedure:

After cleaning the fish, coat it with salt and carefully arrange them in a pan.
Cut each tomato and onion lengthwise and into four pieces and lay them on top of the fish. Slice some kalamansi and mix the juice with 1 cup of water. After mixing, pour it to the fish and let it simmer for 7-10 minutes or until fish is cooked.
