Soup Dish

Ever wondered how to get rid of leftover veggies in your fridge without throwing them away? It doesn't have to be a waste of money for all the extra veggies you bought if you want to try this Soup A'la Jones!

There are two ways you can cook this. Either use canned veggies OR opt for fresh veggies (some leftover in the fridge).

 Finished Product
 Whole corn kernels
 Chicken debone
 Okra

Ingredients:

1 can Veggies OR you can opt for the fresh ones. (carrots, celery, potato, string beans)
1 can Whole corn kernel
1 can Cream of corn
1 lb Ground beef
2 medium size Onions
1 can whole tomatoes
1 can crushed tomato (to add up color in your soup)
3-4 pcs Chicken thighs
4-5 pcs of okra

In a medium size pot, put enough water to boil the chicken (the water you boil the chicken will be your broth, so make sure it's more than enough). Add onions to bring out the aroma and boil until chicken is soft. Take out the chicken and let it cool. Debone the chicken ones they reach room temp.

In separate pan,  saute more onions and mix your ground beef until brown, set aside.

In another separate pot, pour your canned veggies (or fresh ones), add your ground beef, tomatoes and corn kernels and bring to simmer. If you're using fresh veggies, use your chicken broth to cook the veggies. Add your chicken broth and while that simmers, cut the okras in circular or whatever you prefer to cut them and add them to your broth. Bring to simmer.

Lastly, pour the cream of corn and chicken on your soup.. a lil salt, simmer for a few more minutes and you're ready :)

Inihaw na Bangus

Inihaw na bangus. We don't do this everytime but this Sunday, we opt to cook something special for dinner, one healthy dish and something not from the can :D

Bangus (Milk Fish)
Fresh water fish

 Onions and tomatoes for stuffing

 Stuffing

Finished product

Ingredients:

1 pc medium size bangus (milk fish)
4 pcs medium size tomatoes
3 pcs medium size onions
salt

Clean the fish (tradional cleaning of removing its internal parts), don't remove the scales. Using a knife, slice the back of the fish to make an opening (as seen on the picture) around 4-5 inches long depending on the size of the fish. Sprinkle both sides with salt, set aside.

Chop onions and tomatoes and mix them together (this will serve as stuffing for the fish). Wrap the fish with its stuffing with foil wrapper and set aside. Prepare your griller and make sure you have enough charcoal to last the duration of grilling. Put your prepared fish on the griller and alternately turn the fish every few minutes to keep it from getting burnt. You can either open up the foil to check if its cooked or when the fish stops excreting juice. It takes about an hour or so to cook :D

For your sauce: Some left over stuffing will be perfect combined with soy sauce and a bit of lemon juice OR vinegar. Chopped red chilli pepper will spice it up. yum yum

Food with no name

Pulutan: (According to hip 'n free) is a Filipino term used to call any food that accompanies beer during drinking sessions. Well... Some would but I prefer to eat it with rice, or just plain this.

Me? I'm going to call this tofu tofu!




Ingredients:

5 pcs hotdog
2 cubes tofu
1 pc (big size) onion
2 pcs long pepper (green)
1/4 cup soy sauce
1/2 cup vinegar

In a pan, fry hotdog and tofu separately. Slice your tofu in smaller cubes and the hotdogs in a small round slanting shape (or however you want it) set aside. Chop onions and pepper but not too fine.. make sure you can "bite"them when eating. In a bowl, mix all ingredients starting with the hotdog, tofu, long pepper and onions. Mix them well and lastly pour soy sauce and vinegar and mix all ingredients. Whoala! Tofu Tofu!

Chicken fingers? or Nachos?

Today, I was browsing through recipes online when I found the most mouth watering nacho recipe I've ever seen, I thought I'd cook some for dinner, and though Monday afternoons are fairly traffic, it is not safe to say "it's Monday, I will be home early" needless to say, it was late when I arrive the grocery. Change of plans.. I went for something familiar and easy to prepare.



Chicken Fingers

Dipping Sauce:

1 medium pack mayonnaise
1 tbsp. lemon juice
1 tbsp. honey or (sprinkle of sugar)
mustard powder (i used mustard, the one you put on burger :))





For the Chicken:

2lb chicken breasts cut into strips
1 tbsp sugar
1 tsp. salt
black pepper (as desired)
garlic powder (as desired)
1tsp. paprika
1 cup flour
2 eggs lightly beaten
2-3 cups bread crumbs
cooking oil for frying

Combine mayo, lemon juice, honey and mustard together. stir and put aside. Best when served cold.

In a bowl, mix chicken strips, sugar, salt, black pepper, garlic powder and paprika. Make sure spices evenly coat your chicken strips. Start heating your pan with cooking oil to fry your chicken (best if they're deep fried). Working by servings, coat chicken in flour, then deep in egg then finally coat in breadcrumbs. Fry until chicken turns golden brown.

Tinolang Manok (Chicken Soup)

Recently, I noticed how my brother loves to cook tinola. I'm not so fond of it as I rather have my chicken fried but the way he cooks it, and the color of it after it cooked makes me hungry. I like my tinola yummy and NOT pale.




Ingredients:

2 pcs. chicken breast
1 chicken cube
1papaya (fruit)
red pepper leaves
red pepper
onion
water
cooking oil

Saute first your chicken in a skillet with hot oil (with your desired cut size). Stir until a bit brown or fairly cooked. In a separate pot, put a small amount of oil and toss your onions, mix until aroma comes out. Pour your desired amount of water in the pot and let it boil. Add your chicken and let it boil in a medium fire. Add your chicken cube (salt and sugar if you need more taste) and lastly the veggies (papaya and pepper leaves) so as not to over cook them. Add chopped red chilli pepper or pepper flakes (if desired) to add spice in it :D

Quick Dinner

If there's one thing you need to cook without rushing, it would be dinner. Why? it's because this is the time when everybody gets home and relax, maybe hungry a 'lil but.. you can wait the rest of the night. If there's one quick cooking needed to be done, I'd say breakfast but.. who eats sloppy joe's for breakfast? alright.. I guess me and my brother are guilty.

For dinner, I came home meaning to cook some sloppy joes homemade style.. I hope you like it.

  

Ingredients:
1/2 lb ground pork
1 can tomato chunks
1/4 cup steak sauce
1 big clove onion
1 medium size green bell pepper 
1 medium size red bell pepper
Olive oil or any cooking oil available 
Salt and sugar to taste
4 pcs. crusty roll (French Baker) / Bolillos by purposedrivenchef

(Slice onion and pepper in your desired size) Heat oil in  pan and toss your onions and bell pepper in there . Saute until the smell comes out. Mix the ground pork with your onion and bell pepper, keep stirring until brown.. Add steak sauce and tomato chunks and simmer in very low fire. Add salt and sugar to taste. Whoala! makes 4 sloppys :D

What can you get from lemon and tea?

I recently wrote about the lemonade cleansing diet (which  by the way of research is a good way to detoxify and cleanse the body) but not without its grueling and intense dieting combination. For some health enthusiast, the lemonade cleansing diet (master cleanse) can be done in as easy as 1,2,3 step routine for a month while some would sweat it out like a math exam. 



But did you know there's another way to detoxify your body without depriving yourself of food?  


This, I pretty much figured out myself even before my sister told me all about it. On top of our fridge is a box of green tea my mom bought when she was here. Take note I am not a fan of green tea or any tea for that matter. I go coffee and more coffee as the day smiles on me (like the lemon image on top). Then one night after we ate dinner, i still felt like eating but already full so instead of drinking plain hot water like what my lola always told me, I dunk a green tea bag in my hot cup of water and whola! few minutes later i felt better, and as the day was ending I opt to complete my water intake so I made me another cup and there started my body's regular detoxification "if you know what I mean) :D

Oh and by the way.. try squeezing few drops of lemon in your tea and yum yum! talkin' about putting some zest in your drink
