Ginataang Kalabasa

I always thought, cooking anything with coconut milk is complicated.. There's always this notion that somehow a certain ritual is done on when and how to mix this certain ingredient to your recipe. Turns out it does like any other ingredient out there... Have fun cooking!

Ingredients:

1/4 squash (kalabasa), peeled and cut into cubes (For small size squash, you can opt for half the size)
1 bundle string beans (sitaw), cut in 2-3 inches long.
1/ 4 kilo Shrimp (you can choose to devein or not)
1 tbsp. fish sauce (plain salt if you don't feel like using fish sauce)
2 cups coconut milk (unang piga)
2 cups coconut milk (pangalawang piga)
2 cloves garlic
1 medium size onion, sliced lengthwise
1 pc. broth cube

Procedure:

  • In a saucepan, put the squash, string beans, onion, garlic and coconut milk (pangalawang piga). Simmer it  for 5-10 min or until vegetable is cooked.
  • Add the shrimp and coconut milk (unang piga), add fish sauce or salt to taste. Bring to simmer until shrimp is cooked.
  • Serve..
